‘96 NY Origins

Founders Dave and Steve launched their first cafe at 52 Irving Place, specializing in a variety of 10 to 12 single-origin and house- blend coffees, a novelty at a time when most New Yorkers grabbed their morn- ing brew from delis or diners. Despite its modest size of just eight tables, Irving’s specialty coffee offerings quickly captivated the neighborhood, leading to overnight success.

‘98 Sourcing / Roasting:

Steve and David shifted their focus to sourc- ing their own beans, working directly with farmers and managing wholesale and in-house roasting. They purchased and converted a small carriage house in Millerton, upstate New York, into a roastery. To this day, all coffee continues to be roasted in Millerton, NY.

‘99 Online:

Irvingfarm.com went online enabling customers to order their unique coffee blends online and learn about their direct partnerships with coffee farmers.

‘01 Irving Place

Dave & Steve relocated their café to 71 Irving Place, establishing our flagship location—a trusted institution built on history, quality, and community.

Irving was recognized for its exceptional quality and was awarded “Best Coffee” by New York Magazine, cementing its reputation as a top destination for coffee enthusiasts in the city. This accolade highlighted Irving’s commitment to excellence in sourcing, roasting, and serving, drawing even more customers to their doors.

Irving opens their first Upstate New York Cafe at 44 Main Street.

The company began experimenting with single-origin coffees and smaller batch roasting to highlight unique flavor profiles. We are proud to maintain these long-term, sus- tainable relationships at the origin.
